Healthy Homemade Mac N' Cheese

My husband and I love homemade Mac N' Cheese, but finding a healthy recipe that tastes good is pretty hard to find. Tonight we tried out a relatively healthy recipe, and it was a winner! See below for the recipe with my own additions

Mac N' Cheese With Plenty of Dairy

1 cup cottage cheese (not low fat)
2 cups whole milk
1 tbsp dijon mustard
1/2 tbsp paprika
4 cups shredded cheddar cheese
2 cups dry elbow pasta
2 cups (or more) chopped veggies (cauliflower, broccoli, zucchini, carrots, celery...whatever you have)

Preheat oven to 375 F, and grease a covered casserole dish with cooking spray
In a blender blend until smooth the cottage cheese, milk, mustard, and paprika
Combine the wet mixture in a large mixing bowl, with the shredded cheese and dry pasta
Once they are all combined, dump entire mixture into your greased dish, bake covered for 30 minutes
After 30 minutes, uncover and bake for another 20 - 30 minutes

Let cool and serve

This is a really quick recipe, it only takes about 10-minutes of prep time! It's great because the pasta does not need to be pre-cooked, and it worked out perfectly for me!
